Summary

A Brazilian micro lot naturally processed by a small fazenda in the Chapado Mineiro. Full bodied with notes of cocoa and milk chocolate, moderate acidity and a sweet finish, it is an evergreen when extracted as espresso.

The Origin

The perfect definition of the seasons, with the hot and humid summers and the mild and dry winters, as well as a growing altitude of 800 to 1300masl give the coffees produced in the Cerrado Mineiro region, state of Minas Gerais, an exclusive and high-quality identity.

This micro lot, specifically, comes from the area of ​__Patrocinio__, known for its coffee growing tradition and quality.

The Farm

Valdemar Amaro Milano was born in Resende Feijó and grew up in Paraná, a southern state of the country in a family that has been growing coffee for two generations.

He moved to Patrocinio at the age of 22 and there he started up the Fazenda Chapadão de Ferro, which extends over 20 hectares of which 13 are devoted to grow and harvest coffee of Catuai and Mundo Novo varietals. The Fazenda sits at an altitude of 1000m above sea level.

The process

The micro lot is composed of Red Catuai cherries only, carefully selected to eliminate the over or under ripe ones.

This micro lot has been processed according to the classic natural approach.

The cherries are sun-dried on raised beds and frequently turned to avoid excessive fermentation until the residual moisture has reached a level around 10-12%. This takes about three weeks.

The beans are then mechanically separated from dried cherry husks and parchment (hulling), then packaged into Grain Pro sealed bags.

In the cup

This is a high quality Brazil with the classic notes of a naturally processed coffee. We recognized notes of cocoa, milk chocolate, raspberry and floral hints along with reduced acidity and a sweet final.

The roasting profile we have developed for this microdot, with its resulting medium color, makes it very suitable for espresso and moka extractions.
